In contrast to other cuisines, the Thai ethnic community in the Northwest region enjoys a popular dipping sauce called “cham cheo.” Among the components of the “cham cheo” are mac Khen fruit, dried chili, lemongrass, and salt. Several kinds of foods, including dried buffalo meat from the kitchen, barbecued meat, and vegetables, are dipped in “cham cheo”.
